One night at the beginning of 2014, my junior year in college, I was thinking about the past and future. I remember meals from my childhood that I absolutely loved and looked forward too. My moms homemade mac and cheese or her sweet potato pies on thanksgiving.
That got me thinking even more. What meals will my kids love for me to cook? Meals that I can make unlike anyone else. I’m not a horrible cook, but I’m not the best either. How can I get better at cooking? How can I learn new recipes without overwhelming myself?
That’s when I came up with my monthly recipe challenge. Every month I would cook a new recipe. One that I had never cooked before. No matter how hard, easy, or what culture it came from. If I could get the ingredients for it I would try it.
The first meal I cooked was home-made mac and cheese. It turned out really well. I learned to cook a steak. I also cooked a few Japanese meals: curry rice and dango. I planned on learning how to make melon pan (Japanese sweet bread) and homemade bread.
A few months into my challenge my situation changed. I was no longer able to experiment with food. Now, two years later, I’m able to start my challenge up again. Plus in a few months my son will be starting solids and I’m excited to try new foods with him.
As I had said up above every month I am challenging my self to cook at least one recipe that I have never cooked before. I think the only difference is I may do more than one recipe a month. In March I’ve decided make plantain chips. My grandma used to make these and I’d love to try it myself. I’ll also be making apple cinnamon chips. Both are pretty easy recipes.

We all have a bucket list. Whether it is written down or in your head, we all have things we want to accomplish before we die. I think those things say a lot about who a person is or who they want to be. That being said here’s a peek into my bucket list.
Before I Die I Would Like To….
…Have my own personal library in my home
I love to read, so having my own personal library is one of my goals. I also hope to have kids that love to read. We will fill the library with books for kids and adults of all ages.
…Be more positive
I am a pessimist. All day, everyday I’m thinking negative thoughts. It’s depressing. I want to change that.
I want to wake up everyday regardless of what’s going on or the weather and think today is going to be a good day. I want to be able to lift others up and brighten their day. I want to teach my son to be positive too. I want to be happy and being positive is one step to that happiness.
…Take my mom on the vacation of her dreams
My mom has done and sacrificed sooooooo much for me. I want to be able to give back to her and thank her for everything. When I am able to I want to send her on her dream vacation where she can relax with no worries.
…Learn a new language
Learning a new language opens up so many doors. It’d be great to be able to give myself more opportunities. I also want to teach my son ( and any future kids) the language that I learn so that they also have more options when they grow up.
I actually started learning Spanish in high school and while I was in College I tried to teach myself Japanese. With both I like to think got pretty far. I’ve learned many words, phrases, cultural things and grammar rules. With both I got stuck when it came to conjugating verbs. That’s when I gave up.
Now I’m learning sign language. I haven’t gotten far yet but I’m taking my time and practicing daily. I hope that this will be the one I actually become fluent in. I like sign language, because I can teach it to my son while I learn myself. Whereas with other languages it’s best if your already fluent when trying to teach a baby.
…Help the homeless
This is a big one on my list. A few year ago while surfing through YouTube I randomly came across some videos. The first one was of a little girl making care packages to give to the homeless. In my mind I thought I’d love to do that. So I went from that video to another and another. I gathered lots of info on things to do to help the homeless.
My goal is to have care packages in my car so that when I come across a homeless person I can give that to them. Since this costs money I’m not able to do it right now, but as soon as I am able to I will.
…Follow my dreams
My main dream is to own my own daycare. I believe that those first few years in a person’s life are the most important. I want to create a place where children can grow and development in a way that will help them be successful later in life.
Also I’m believe that by following my dreams I will teach my son to follow his. Children learn by watching their patents. I want to be a great role model for my son.
I love myself and who I am, but I don’t necessarily feel pretty. I want to look in the mirror everyday and just feel pretty without having to convince myself that I am. I want that confidence that comes with feeling good about myself.
…Be someone’s role model
I want my accomplishments to be so great that people look up to me, that they aspire to do the things that I have done, and to help people the same ways I have.
…Improve my vocabulary
I’ve been told that I speak very well, but I know that I can do better. I also want my son to be a good speaker and children generally speak the same way as the adults that they are around. So if I want my son to have a good vocabulary I need one too.
…Be a good parent.
I want people to look at my kids and be able to tell from their actions that I’m a good parent.

My first post is going to be a little introduction. I do have an about me page, but this is going to be a bit more in depth and about where I am in my life right now.
One thing I know for sure is that I’ve always loved writing. My favorite and easiest things to write are poems. Those come naturally to me. I would also write stories but could never finish them. I’d have the most brilliant ideas, but part of the way through I would lose my way. I guess writing stories just isn’t for me. I’ve never written a blog before, but there’s nothing wrong with trying something new.
I’m not the kind of person that does well with conversation, but I do have much to say. I’ve always wanted somewhere to put these thoughts, but the other mediums I’ve tried didn’t work for me. I’ve tried writing in a diary, but my mind moves faster than my hands. I’ve thought about just typing them up, but I could never find the motivation to sit at the computer and type. A blog I can do though and here’s why.
My primary goal in life is to help others. It doesn’t matter how small or big, as long as it helps another. It could be giving someone a pencil or helping a homeless, and that’s my goal. I believe this blog can help someone. Even if it’s just one person, that’s all I need. I don’t have a very adventurous life, nor am I an adventurous person. I still believe that my insight and knowledge is worth sharing.
Helping others is also why I want to own a daycare. Those first years of life are very crucial to how we turn out as adults. If I can help the next generation to become great, If I can create an oasis for kids to learn and be themselves, If I can convince one child that they are perfect just the way they are then I have completed my goal.
Since I’m a mom, I want all of those things for my son. I want him to grow up to be kind, to be different, and to be open minded. I want him to be a gentleman, not a playboy. There are many many things I want him to be (I’d have to make a whole other post on that), but most of all I want him to be empathetic, and I want him to follow the golden rule. Treat other the way you want to be treated. I believe that just those two things will help him to become a great man.
I am a first-time mom, so all of this is new to me. I’m also a single mother, so, for the most part, I will be doing this on my own. I’m the kind of person that likes to do research or see how others are doing things. One thing I have been told and am learning, though, is to follow my instincts. If it does not feel right to me, even if other disagrees, I will do what I feel is right, because he is my son.
Staying true to yourself and what you believe is hard, especially when everyone is telling you not too. I know I’ve done some things that go against what I thought was right. I wish I hadn’t, but I’ve learned from my mistakes. These mistakes have made me who I am today, so I don’t regret them. Though because of these mistakes I know how important it is to stay true to myself and my beliefs.
It may seem like I didn’t say much, but this me. I’m a single mom raising my son to be kind. My goals are to help others and stay true to what I believe is right.
