While some people can just drop animal products at the drop of a dime, I am having some trouble doing so.
While I am working through these problems I still thought that I would share them with y’all just in case someone else is struggling with the same things. For me it’s important to say that unlike a lot of vegans I’m not just cooking for myself. I am cooking for two other adults and an infant. The infant is the most important part of that. I need to make sure that my son is going to be getting all the nutrients he needs before I fully make this change. It’s one thing for an adult to do this when it’s just them and another when there are children involved.
So the two things that I am finding to be hard at this point are finding simple, cheap, filling recipes and holding on to the feeling that made me want to make this transition. In the video below I go more in-depth about these two things.
One thing that hasn’t been too hard for me is giving up the animal products. Right now I’m only struggling with pizza and McDonald’s. Other than that I’m not eating any animal products and I’m actually quite proud of myself. Giving them up (even cheese, I’m a cheese fanatic) hasn’t been hard, but finding those recipes has been.
In the video I explained a few things that I am doing to work past these things and I will most definitely keep at. Going vegan is more than just about me. It’s about the planet and the animals. I have to remember that. I hope that my son will follow in my footsteps when he gets older.
